Our sushi chef at SUNSETTA is a seasoned veteran with over 40 years of experience. He has a proven track record of winning sushi competitions twice in the past and has even run his own sushi restaurant. He has also served as an instructor for sushi and Japanese cuisine at a culinary vocational school.
Unique Okinawan Sushi Made with Island Fish
The sushi he prepares at SUNSETTA primarily features island fish that can only be caught in Okinawa. He handles a wide variety of fish, ranging from colorful, vibrant blue fish to the three major premium fish of Okinawa, such as the Leopard Coral Grouper.
Okinawa is home to many white-fleshed fish, which, although mild, possess an elegant sweetness and umami flavor. We offer special sushi that not only features fresh fish but also reflects his many years of sushi-making expertise.
